Roasted Fingerling Potatoes

  • 1 1/2 lbs. of fingerling potatoes
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • olive oil spray

 

Directions

  1. Preheat oven to 375 degrees F.
  2. Slice potatoes length-wise
  3. Add the potatoes to a foil-lined cookie sheet
  4. Spray the potatoes with olive oil
  5. Sprinkle  with salt and pepper
  6. Place pan in center rack of oven for 35 minutes

Coleslaw Dressing

Bowl of coleslaw

• 1/2 cup of mayonnaise
• 2 tablespoons of sugar
• 1 1/2 tablespoons of lemon juice
• 1 tablespoon vinegar
• 1/2 teaspoon black pepper
• 1/4 teaspoon salt

  1. Whisk all the ingredients together until smooth and creamy
